Simple Recipe: Vegetarian Sichuan Appetizing Soup 簡單食譜:素食四川菜開胃湯



                     


This is a very simple appetizing soup to make. I only add Sichuan Pickled Vegetables and Vegetarian Mocked Meat as to me, adding other ingredients will "complicate" the taste. This soup go well with white rice or even fried rice.

Serving: Family Serving Preparation time: ~ 30 mins

Vegetarian Ingredient (Please use vegetarian ingredient with NO EGG):

* Sichuan Pickled Vegetables (see picture, just half of the it will do, rinse and cut into slices)
Rinse with water and soak in the water for about an hour before cooking to prevent over-salty.

* Vegetarian Mocked Meat/Hedgehog Mushroom
(Hedgehog mushroom is a great replacement to mocked meat as it has great taste and make nice soup, I have bought the [seasoned hedgehog mushroom pack]
in the vegetarian minimart in Singapore- See picture)

* MSG to taste (not necessary to add salt as it is salty enough by the vegetable itself)


Preparation:

Boil a pot of water in a family-size pot. Add in the Sichuan vegetables slices and vegetarian Mocked Meat.

Bring to boil for about 5 minutes. Thereafter simmer at medium or low heat for about another 25 mins. Add MSG to taste.

There you are ready to serve !

Suggested garnishing; red cut chilli in dark soy sauce.

這是一道簡單做的開胃湯。我只用了四川菜和素食肉。因爲若加其它材料味道會太“複雜”。這湯配白飯或炒飯都很讚!

(一家人份)        準備時間:~30分鐘

素食材料(請用無蛋的材料):


*四川菜(請看照片,大概一半,洗乾淨切片狀)
用水清洗後,烹煮之前在水中浸泡大概一小時避免過咸。

*素食肉/猴頭菇(一種蘑菇)
(猴頭菇適合用來取代素食肉因爲口感很Q,而且適合煮湯,能讓湯味加分,可買冷凍包裝的猴頭菇或新鮮猴頭菇,個人在新加坡齋料店買了《調味冷凍猴頭菇》,味道非常好-請看圖片)

*味精(適量調味,因該不需要加鹽了,因爲四川菜本身已經是咸的)


準備:

用家庭式的鍋子煮水,加切好的四川菜、素食肉。先用大火煮5分鐘然後再用小火或中火煮大概25分鐘。加適量味精調味。

完成了!

提議:可以沾黑醬油和切辣椒。

Recipe for Vegetarian Hot Fried Instant Noodle 素食辣味乾泡麵


This can be purchased in most vegetarian shops in Singapore.
這在很多新加坡素食齋料店都有賣。




This is delicious. Creativity to your instant noodle. Boil water (May add some salt in the water) and scald the Broccoli (or choose your favorite vegetables) separately. Drain the water and serve with your noodle.  

這很美味。為您的泡麵增加色彩。煮水(可加一點鹽在水裏)燙花椰菜(或選擇您喜好的蔬菜),瀝干水份。擺放在盘上 。

Convenient Vegetarian Recipe: Oyster Mushroom in Salted Vegetables / 便利素食食譜:鮑魚菇鹹菜


Thanks to my mother for contributing this recipe !

This dish go well with white rice or white porridge !

Family serving. Time Require: ~10mins

Vegetarian Ingredient (Please use vegetarian ingredient without EGG):

* Oyster Mushroom (1 packet)- Rinse clean.

* Little Salted Vegetables, rinse clean and slice (see pictures)

* 1 Tomato (dice into cubes)

* 2 ginger slice

* 2 red small chilli

* 2 assam slice

Vegetarian Seasoning:

* little soy sauce to taste

* little MSG to taste

* little sugar to taste

* Heated Oil (about 1 tablespoon)

As there are salted vegetables, remember not to add too much for the seasoning in case it become too salty.

Preparation:

Combine all the above vegetarian ingredient onto a plate nicely. Add the combined seasoning. Steam in a wok/steamer for about 10 minutes. ..

That's all..It's that simple. Ready to serve.

Recipe for Vegetarian Yong Tau Fu Noodle Soup / 食譜:素食釀豆腐麵湯

4 Serving Preparation time: ~20 -30 mins

Soup base is easy to make. And for this soup base can go with any of your favourite vegetarian ingredients or noodles.

Vegetarian Ingredients (Please use ingredient with NO EGG):

* Cabbage (cut into thin slices , this is to make oil base for soup flavour, if you think is a hassle, can replace it by using the * ready-made mushroom minced meat in oil packet,see below for the picture)

* Yellow Noodle

* Vegetarian "Stuffed Beancurd" (see picture, available in vegetarian shops)

* Ladies Finger (Wash and Cut)

* Kang Kong Green Vegetables (Wash and Cut)

* Firmed Toufu (Wash and Cut into triangle cubes)

* May add other favourite vegetarian ingredient like tomato, chilli, bitter gourd ...etc

Vegetarian Seasoning:

* Vegetarian G Powder/Mushroom seasoning to taste (Optional, use either one)

* Soy Sauce, Salt, MSG to taste

* Ready-made Vegetarian Chilli Paste for garnishing (optional)

Preparation:

Oil base for the soup (for hassle free, may use the substitute, ready-made minced mushroom in oil shown in picture):

Add and warm little oil, saute the cut cabbages in a wok till golden brown. May refer to pictures below (this is to set aside even for making soup next time. So if you have excess, just keep it to standby for fast soup making next time) This oil will enhance the flavour of soup.

**Tips: Upon cabbages turning golden brown, you can add soy sauce to saute for fragrance about 1 min, then add little water and simmer for about another 1 min. After sauteing soy sauce, it will enhance the flavor of the soup.** This is omittable step.

Next..

Boil about 3/4 pot of water in a family-size pot. Add in the above cabbage oil made, stuffed beancurd, firmed Toufu and simmer for about 15 mins. Add seasoning of salt, soy sauce, MSG, mushroom seasoning (optional).

In a separate pot, boil ladies finger, kang kong separately in water. It cooked fast for these 2 type of vegetables so have to boil separately without adding to the soup. Set aside after draining the water. Be careful not to overcook these green vegetables as it will not be nice if overcooked.

Boil the yellow noodle in separate pot of water. For yellow noodle just lightly rinse in hot water will do in seconds. Do not overcook the yellow noodle as it will be not nice. Drain the water and set aside the noodle in a bowl.

Add the soup to the yellow noodle, top with the kangkong, ladies finger. Here you are ready to serve!

* 高麗菜 (切絲)
(這是爲了作湯頭的油,如果嫌麻煩的話,可以用販賣的含油香菇肉醬代替,請看以下圖片作參考)

* 黃色的麵

* 素食釀豆腐 (素食店有賣)

* 空心菜 (洗乾淨切好)

* 羊角豆 (洗乾淨切好)

* 豆干(洗乾淨切成三角形狀)

* 可用其它喜歡的素食材料如番茄、苦瓜等

素食調味料:

* 素G粉調味料/素香菇調味料 (可免:適量,只用其中一樣)

* 醬油/鹽/味精適量調味

* 辣椒醬料-配料

準備:

熱油,加切好的白菜絲爆香, 金黃色就可以了(請看以下圖片)。這個油可以有多餘的擱放在一旁,方便下一次烹煮湯頭用。(這是爲了作湯頭的油,如果嫌麻煩的話,可以用販賣的含油香菇肉醬代替,請看以下圖片作參考)

**建議:白菜變金黃色以後,可加適量醬油爆香大概一分鐘,再加點水煮多一分鐘。醬油經過爆香可以增添湯的味道。**這是可省略的步驟。

在另外一個家庭式的鍋,煮大概3/4水,加爆香好的白菜油、豆干、釀豆腐。加調味料,醬油、鹽、味精、香姑調味粉。燜煮大概15分鐘。

在另外一個鍋,煮水各別燙空心菜和羊角豆。因爲這兩樣菜很快熟所以要分別燙。瀝乾水把燙好的菜放在一旁。請注意不要燙太久過熟就不好吃了。

在另外一個鍋,煮水燙麵(很快就熟了,所以只需燙幾秒就可以了,過熟不好吃)。瀝乾水把燙好的麵放在一旁。

把煮好的湯倒入麵裏,加上燙好的青菜就完成了!

Simple Recipe- Vegetarian Salted Vegetable Silken Toufu Soup/簡單食譜:素食鹹菜豆腐湯




                 

Simple Vegetarian Dish (Soup) to make that serve well with white rice. A very appetising soup to make!

Preparation time: About 15 minutes (not including white rice cooking time) (1 serving)

Vegetarian Ingredient (Please use ingredient without EGG):

* Salted Vegetable (Cut into slices)

* Half block of Silken Toufu (Cut into cubes)

* 1 Tomato (Cut into cubes)

* Suggested assorted Vegetarian ingredient, (see picture, can be purchased in vegetarian minimart)

* Asam Slice (just half slice for the sour taste)

* Ginger Slice (1 slice)

* Little salt, soy sauce/MSG to taste

* Little Mushroom seasoning to taste (optional)

(Cook the white rice in advance of the cooking)

Preparation:

Boil about 4 bowl of water. Add in cut salted vegetables, asam slice, ginger slice and keep boiling about 10 mins allowing the salted vegetables to soften. Thereafter add in the cut assorted vegetarian ingredient, cut tomatoes, toufu, salt/soy sauce/MSG/Mushroom seasoning to taste. Simmer under medium heat for about another 5 minutes.

There you are ready to serve and combine the soup with your steamed white rice ! Have cut chilli in soy sauce to use for garnishing.


簡單的素鹹菜豆腐湯。非常開胃,配飯吃很棒哦!

烹煮時間-大概15分鐘 (不包括煮白飯的時間)
(1人份)

素食材料 (請用無蛋材料):

*鹹菜(切片)

* 豆腐 (半塊,切小塊裝)

* 番茄 (1個)

* 齋料 (照片參考,可在齋料店購買)

* 亞參片(半片,讓湯有酸味)

* 姜片(1片)

* 鹽/味精/醬油適量調味

* 香菇調味 (可免)

(事先把白飯煮好)

準備:

煮大概4碗水。加切好的鹹菜、姜片、亞參片,滾大概10分鐘煮軟鹹菜。然後加齋料、番茄、豆腐、醬油、鹽、味精、香菇調味料調味,中火大概燜煮5 分鐘.

完成了!可以佔切辣椒醬油配白飯吃!

Recipe- Using left over ingredient to make Vegetarian Tom Yam Fried Rice /Fried Rice / 食譜:利用剩下的材料做素食東炎炒飯/炒飯


Hi everyone, I think especially festive season you will find your fridge left with lots of stuff. Like Chinese New Year if you have steamboat, you will left with some assorted mushroom or vegetables. In order not to waste, we have to use these ingredient before they are left rotten. Sharing with you simple Vegetarian Tom Yam Fried Rice/Fried Rice using your overwhelming left over ingredient.

If you have left over vegetarian Ingredient 
(Please use ingredient with NO EGG):

*White Rice

* Assorted vegetables like mushroom, corn, or suitable ingredient etc (Dice it into small cubes) lettuce for topping

* Sliced Chili (for Tom Yam Fried Rice only)

* Little Ginger Slice


Vegetarian Seasoning:

*Vegetarian Tom Yam Paste

(For non Tom Yam Fried Rice, use Soy Sauce and a little vegetarian Mushroom Oyster sauce instead)

* Salt to taste (optional, according to own taste)

* Vegetarian Mushroom Seasoning Powder (optional according to own taste)

Preparation:

Add little oil to frying pan, saute ginger slice.

Then stir-fry the assorted mushroom, corn etc for about 30 seconds, then add the white rice, tom yam paste, mushroom seasoning powder and stir fry till the rice is even up with the tom yam paste. (*For non tom yam fried rice, use soy sauce and a little vegetarian oyster sauce instead). May Add little salt if preferred according to own taste.

Serve ! May top with lettuce (if you have left over) on top of the fried rice

大家好!我想佳節期間大家一定會發現很多剩菜、剩飯之類的吧!比如吃火鍋的話冰箱也會堆滿很多剩下的食材。爲了不浪費,在食材放坏之前,要趕緊用掉。所以這次和大家分享利用剩下的多餘食材做簡單的素東炎炒飯/炒飯。

如果你有剩下素食材料(請用無蛋的材料):

*白飯

* 各種蘑菇類/玉米/ 或適合的材料(把它切成小塊狀),沙拉菜等

* 姜片少許

* 辣椒切片(用在東炎口味的)

素食調味:

*素東炎醬

(如果不做東炎口味可用醬油、和素香菇蠔油)

*鹽(按照個人口味可免)

*素香菇調味粉(按照個人口味可免)


做法:

加一點油在炒鍋裏.爆香姜片。加香菇等剩的材料大概繙炒30秒。加飯、然後加東炎醬、素香菇調味粉翻炒均勻。

(若不是做東炎炒飯,可用醬油和和素香菇蠔油代替)


完成了!若有剩沙拉菜,上桌時可以放炒飯上.

Suggestion: For all vegetarian seasoning, ingredient best to purchase it from VEGETARIAN SUPERMARKET / MINIMART to ensure they are purely vegetarian ingredient. And it is also convenient to find and purchase all vegetarian ingredient from vegetarian mart.

Vegetarian Ingredient for Soup Base (Please use ingredient with NO EGG):

* 1 peice of corn (that come with the corn leaves) Cut into cubes. And keep the corn leaves after wash.

* White Cabbage (as seen in pic) Slice it. Use the "stem" (hard) portion only for soup base.

* 1/2 Carrot. Cut into cubes.

* 1 can of button mushroom (keep the water)- optional as up to individual taste

* Soy Sauce

* Salt, MSG to taste

* Mushroom Seasoning (optional)

Preparation for Soup:

On your steamboat wok, start adding and boil the water, add in cut corn and corn leaves, cut carrots, canned button mushroom with the water in the can.

On separate cooking wok with medium heat, heat a little oil, add in little cabbage slices (stem; hard portion only as the leaf portion get cooked and become soggy fast), little soy sauce saute shortly only for about 3 seconds, add little water.

(After sauting Soy sauce it will bring more fragrance)

Pour this mixture into the steamboat wok that was boiling with corn and corn leaves and vegetables.

Add in soy sauce, salt, MSG mushroom seasoning (optional) to the steamboat soup to taste. Boil for about 10-15 mins and you can start your lovely steamboat meal.

(As you will be keeping the heat on while enjoying steamboat, the soup will become more and more tastier).

Suggestion: If the soup get dry up, may add some water and add seasoning (e.g heated "cooked" oil, soysauce or salt) to taste.

Before making the soup, you can start washing and cutting your favourite dish:

For steamboat ingredient, choose your favourite vegetables, mushroom, tofu (as seen in pic some suggestions), and visit vegetarian supermarket for vegetarian Cuisine (like the vegetarian dumpling as seen in my pic)..etc Enjoy washing and cutting the vegetables, mushroom...etc

For Chilli Sauce (Or may choose your own ready-made favourite sauce from vegetarian supermarket):
Use about 10 big red chilli  or additional chilli padi for more spicy taste , 1 small lime cut into half (see picture) with the skin and seed , add little salt to taste, little water into the blender for blending. Stop the blender for a while and use spoon to blend the mixture evenly. Then restart the blender again for smooth blending.

素食火鍋湯食材(請用無蛋材料):

*玉米一條 切塊狀(玉米葉也要用到,把它洗乾淨)

* 白菜 切片(用菜的根部因爲比較硬,若用菜葉的部分很快就會爛掉)

* 红萝卜半條( 切塊狀)

* 罐頭蘑菇一罐(裏面的水也要)-按照個人口味可免

* 醬油

* 香菇調味料 (可免)

* 鹽 和 味精

準備方法:

* 把水倒入火鍋的鍋裏。煮水,加切好的玉米和玉米葉、紅萝卜、罐頭蘑菇(裏面的水也要)一起煮。

* 在另外炒鍋用中火,熱少量油,再快速大概3秒爆香適量切好的白菜、適量醬油(根部,硬的部分而已,因爲葉子部分很快會熟透),加一點水。
(醬油經過爆香會帶出香味)

把這 爆香好的菜倒入正在煮的火鍋裏。加調味料:適量的醬油、鹽、味精、香菇調味粉。煮大概10-15分鐘就可以開動了。

(因爲邊煮邊吃火鍋所以湯頭也會越來越甜哦。)

建議:如果之後湯乾掉的話可以直接加水,然後再根據個人口味加調味(如熱過的油、醬油,鹽等)

火鍋食材:

(在準備湯之前,也可把材料切好)

可看相片做參考。選擇您喜歡的菜色如白菜、青菜、各種蘑菇類、豆干、素食水餃、到素食超市買素食料等。。。耐心享樂把材料洗乾淨和切好即可。

辣椒醬做法 (或根據個人口味的醬料,可到素食超市買現成的醬料):

把大概10 大條紅辣椒或可加一些小辣椒增添辣味、一顆酸酐切成一半(如以下圖無需去掉子或皮)、適量鹽,一點水倒入攪拌機裏攪拌。再停機一下用湯池攪拌均勻然後再開攪拌機攪拌均勻。。

完成了!請享用愛心素食餐。
