CHEESE (Non-vegetarian)
起司 (不是素食)
Most CHEESE contain natural calf RENNET that is extracted (after slaughtering of the calves) from the inner mucosa of the fourth stomach chamber (the abomasum) of young, unweaned calves. These stomachs are a by-product of veal production. The methods are merciless. Please be careful and selective for those taking cheese or dairy product. Best to purchase vegetarian cheese available in vegetarian supermarket. There are vegetarian cheese made from soy milk too. Do check out in the supermarket.

先說一下一般的起司/乳酪不是素食。一般的起司/乳酪含有[凝乳蛋白(Rennet)]。  [凝乳蛋白(Rennet)] 使用於起司加工時的凝固劑。取得時須將小牛屠宰後才能抽取,方式殘忍。是從屠宰小牛的第四個胃中取出,乳素者在選購起司時,要格外小心。可選購不含凝乳蛋白(Rennet)的起司,它是以菌類發酵,不需再添加凝固劑。最好選擇標榜素的起司。現在也有用豆奶素起司販賣。逛超市的時候可以留意一下。

Please be cautious that there are many type of gummy candies, marshmallows that contain gelatin
(source from animal):

Gelatin (or gelatine) is a translucent, colorless, brittle (when dry), flavorless solid substance, derived from the collagen inside animals' skin and bones. It is commonly used as a gelling agent in food, pharmaceuticals, photography, and cosmetic manufacturing. Substances containing gelatin or functioning in a similar way are called gelatinous. Gelatin is an irreversibly hydrolysed form of collagen, and is classified as a foodstuff and therefore carries no E Number [1] [2].

It is found in some gummy candies as well as other products such as marshmallows, gelatin dessert, and some low-fat yogurt.

Thus for vegetarian please be cautious that this type of candies or item should not be taken.

明膠又稱魚膠或吉利丁(從英文名Gelatine譯音而來),是一種從動物的骨頭或結締組織提煉出來,帶淺黃色的膠質,主要成分為蛋白質。

明膠一般由動物物質精炼而成,因此明膠又稱「動物膠」(Animal glue)。製造者會將牛和豬的骨頭和皮膚放入約70英尺高的爐裏煮滾提煉膠原,再浸濕隔渣。製作過程不使用動物的角和蹄。精練而成的物質乾後會磨成粉末,再混入砂糖、己二酸、順丁烯二酸、檸檬酸鈉,以及人造調味劑和食物色素。

由於膠原經透徹處理,美國聯邦政府不會將製成品分類為肉類或動物製品。不過素食人士會以洋菜作為明膠的替代品。

煮食用的明膠片

明膠被廣泛用於食品(尤其是甜品)及藥物的製造,甚至其他工業用途。作為一種天然乳化劑,其用於食品添加劑的E編碼是E441。

食用的明膠一般為片狀或粉狀,即是明膠片或明膠粉,常用於製作果凍及布丁等甜品。

吉利丁片:片狀的吉利丁,半透明黃褐色。使用吉利丁片時,要剪成小片,水分約用量的5倍,將所有材料加熱至吉利丁融化即可。

吉利丁粉:粉狀的吉利丁,用於果凍及西點。吉利丁直接以熱水攪拌至吉利丁融化即可。

請素食者小心並且不要吃含有以上談到的明膠成分的果凍糖果、 棉花糖 或食品。
