Vegetarian Instant Penang Assam Laksa Recipe 簡單快速素食檳城亞參加沙麵食譜


This is a simple dish to make by using the ready-made grinded [Vegetarian Penang Assam Laksa Sauce] (see picture) which can really save you a lot of time grinding the spices. An appetizing sour and spicy (can adjust chilli for non-spicy) noodle soup enhance with the fresh vegetables and fruit freshness recipe which opens up your appetite even if you have the minimum appetite.

Can also make use of this sauce to make Vegetarian Assam Fish which should go well with white rice.


I bought this [Vegetarian Penang Assam Laksa Sauce] at

But it might be available in some selected vegetarian minimarts.

Serving: 2                           Time require: ~ 20-30mins

Vegetarian Ingredient (Please use vegetarian ingredient with NO EGG):

* Vegetarian Penang Assam Laksa Sauce (about 8 to 10 tablespoon)

Up to preference, adjust the amount according to own taste

* Thick Bee Hoon

* Vegetarian Mock Fish-Cut (*Optional)

* Salt, MSG, little brown sugar to taste (taste according to own preference)

* Vegetarian Mushroom seasoning powder- 1 tablespoon (*optional up to own taste, is for additional flavour) OR

Vegetarian Maggi Vegetarian stock-2 tablespoon (*optional up to own taste, is for additional flavour)

Use either one. Note: if you are using Maggi Vegetarian stock you might not  need to add brown sugar as it already contain some sugar in the stock.

* Assam Slice - 1 piece (*optional but suggest this for the strong sour taste)

* Polygonum leaves (daun Kesum, commonly known as Laksa leaves) - ~ 1 stalk of leaves. Rinse clean. (*optional as is already grinded in the ready-made sauce but will suggest this for added flavour).

*  Lemongrass , 1 or half Stalk. Wash clean, chop into short stalks.
(*optional as it is already grinded in the ready-made sauce)

* Tamarind paste, about 3 tablespoon  (see picture)
 (*optional as is already grinded in the ready-made sauce but will suggest this for added sour flavour).

Add Tamarind paste in a bowl with little warm water, mix and melt the tamarind paste, then use a strainer and filter it onto a bowl. Set the tamarind water aside.



Garnishing:

* Cucumber -half piece (Cut into shreds-see picture)

* Pineapple (Cut into cubes, this can be bought in assorted pack)

* Polygonum leaves-(daun Kesum, commonly known as Laksa leaves) - ~4 pcs of leaves per serving. Wash and pluck the leaves. Use only the leaves portion.

* Mint Leaves- about 4 pcs per serving (Wash and pluck the leaves, use the leaves only)

* Red cut chilli (adjust amount to own taste for spiciness)

Preparation:

Boil about 8 bowls of water in a pot. Upon boiling, add about 8 to 10 tablespoon of Vegetarian Penang Assam Laksa sauce to the water, assam slice, Tamarind water, Laksa leaves (~1 stalk of leaves), vegetarian mock fish, . Add salt, msg, little brown sugar, vegetarian mushroom seasoning to taste. Boil for about 10 mins in medium low heat. If you have time may boil at low heat longer for another about 30 mins to enhance the taste.

On a separate pot, boil the water and scald the thick Bee Hoon for about 3 minutes. Drain and put into a serving bowl.

Add the soup to the noodle. Top with the garnishes stated above.

There you are. You are ready to taste and savor the delicious Hearty Vegetarian Meal. (May add more assam laksa sauce to taste if is not to your taste during the serving).

這是一道簡單做的菜。因爲有了現成的 [素食檳城亞參加沙醬]-請看圖片。這醬含綜合攪拌成的醬料,可以為您剩下很多時間。這是一道開胃的酸辣麵湯加上新鮮蔬菜和水果的清香(辣度可以根據個人口味調,加辣椒)。在您沒有胃口的時候也會讓您胃口大增。

也可利用這個醬料做成素食亞參加沙魚,配白飯吃也很棒!

份量:2人份 所需時間:~20-30分鐘

素食材料(請用無蛋的素食材料):

* 素食檳城亞參加沙醬(大概8-10 桌湯匙)
(可按照個人口味調配)

* 粗米粉

* 素食魚- 切塊狀 (*可免)

* 適量鹽、味精、紅糖少許調味(按照個人口味調配)

* 素食香菇調味粉-1桌湯匙(*可免,但爲了增添味道可以加)



MAGGI 齋湯調味料(*可免,但爲了增添味道可以加)。

只用其中一種既可。如果用MAGGI齋調味料就可选择不用加紅糖了。因爲這醬料含有糖份。

* 亞參片-1 片(*可免,但爲了增添酸的口味就要加)

* 加沙葉- 一束,洗乾淨。 (*可免因爲在醬料裏面含有,只爲了增添香味)

* 香茅- 一條或半條(洗乾淨,切成短塊狀)
(*可免因爲在醬料裏面含有,只爲了增添香味)

* 菊花亞參- 大概3桌湯匙,請看圖片
(*可免,但建議爲了增添酸的口味就要加)

在碗裏,加菊花亞參和一點溫水。然後攪拌均勻融化之後,用過濾器過濾在另一個碗裏。把這菊花亞參水擱放一旁。

配菜:

* 黃瓜-半條(切成絲,請看圖片)

* 凤梨 (切塊)這可以買包裝切好的

* 加沙葉- 一束(一人份大概4片葉子)

* 薄荷葉子- 一人份大概4片葉子(把葉子洗乾淨,拔掉葉子,只用葉子部份)

* 紅辣(切,按照個人口味加)


準備方法:

煮大概8碗水。水滾了以後,加大概8-10桌湯匙的檳城亞參加沙醬、亞參片、菊花亞參水、加沙葉子、素食魚、適量鹽、味精、香菇調味粉、少許紅糖調味。中小火滾大概10分鐘。如果有時閒可用小火煮多30分鐘。

另外煮一鍋水,燙粗米粉(大概需3分鐘左右)。撈起來瀝干水份。放上端碗裏。

把煮好的湯倒入。然後放上以上註明的配菜即可。

完成了!請享用愛心素食餐。如果吃得時候發現味道太淡,這時候可以按照個人口味再加點檳城亞參加沙醬。

Recipe: Vegetarian Olive Vegetables Fried Rice/食譜:素食橄欖菜炒飯



This is a simple dish to make..it taste good without much technique..and can be creative by your own to add with your favorite vegetables.

4 Serving Preparation Time: ~30mins (or less not including white rice cooking time)
Vegetarian Ingredient (Please use vegetarian ingredient with NO EGG):

* White Rice (4 serving portion), to cook in advance

* Frozen green peas, carrot, corn in a packet form. Boil water to scald and soften it as they are frozen. Drain and set aside. Or you can replace with your favourite fresh vegetables.

~Learn from friend Cut cucumber will be nice to replace green peas. But have to add last when frying to avoid over cook that will not nice.

* Little Ginger Slice (mince it)

* Olive Vegetables (Normally come in a glass bottle as seen in picture. Look for type which state it suits vegetarian)

This is the key ingredient ! It is salty, taste good and blend perfectly with white rice.


Seasoning:

* Soy Sauce to taste

* Salt to taste

* Nutritional Yeast , about 5 tablespoon (Great stuff for vegetarians!)

Preparation:


At medium heat, heat the frying pan, add little oil, after warm saute minced ginger till a little golden brown.

Then add and stir-fry the assorted green peas, corn, and carrot for about 30 seconds.

Add in cooked rice. Add some soy sauce and stir fry for about 5 mins. Lastly add in olive vegetables, salt, nutritional yeast and stir-fry evenly.

You are ready to serve! May top with little olive vegetables on top of the rice as garnish. Red cut chilli in soy sauce as garnish too!

這是一道簡單做的菜。不用特別技巧就可以煮得好吃美味。可以根據自己的喜好或創意加蔬菜。

素食材料 (請用無蛋材料):

*白飯

* 冷凍青豆/玉米/红萝卜(包裝式-請看圖片)因爲是冷凍式的所以請煮水,燙軟然後瀝干水份。 

可按照個人喜好用其它蔬菜代替。

~從朋友那裏學到用切黃瓜代替青豆會很香。但如果用黃瓜就要炒飯的時候最後才加而且不能炒太久要不然過熟就不好吃了!


* 姜片少許(剁碎)

* 橄欖菜(一般都是玻璃罐裝,請選擇標榜[素食可用]的)

這是主材料。這橄欖菜本身是咸的,配白飯很搭。炒飯搭配起來味道也很好。


素食調味:

*醬油 (適量)

* 鹽 (適量)

* 營養酵母粉(大概5桌湯匙)


做法:

中火熱炒鍋,加適量油,油熱后,爆香姜碎。姜碎成金黃色后,加青豆/玉米/红萝卜繙炒大概30秒。接著加飯、醬油繙炒大概5分鐘。接著加鹽、酵母粉翻炒均勻。


完成了!可再加一點橄欖菜在上桌的炒飯上。另外切辣椒和醬油當沾醬。
