Recipe: Vegetarian Olive Vegetables Fried Rice/食譜:素食橄欖菜炒飯



This is a simple dish to make..it taste good without much technique..and can be creative by your own to add with your favorite vegetables.

4 Serving Preparation Time: ~30mins (or less not including white rice cooking time)
Vegetarian Ingredient (Please use vegetarian ingredient with NO EGG):

* White Rice (4 serving portion), to cook in advance

* Frozen green peas, carrot, corn in a packet form. Boil water to scald and soften it as they are frozen. Drain and set aside. Or you can replace with your favourite fresh vegetables.

~Learn from friend Cut cucumber will be nice to replace green peas. But have to add last when frying to avoid over cook that will not nice.

* Little Ginger Slice (mince it)

* Olive Vegetables (Normally come in a glass bottle as seen in picture. Look for type which state it suits vegetarian)

This is the key ingredient ! It is salty, taste good and blend perfectly with white rice.


Seasoning:

* Soy Sauce to taste

* Salt to taste

* Nutritional Yeast , about 5 tablespoon (Great stuff for vegetarians!)

Preparation:


At medium heat, heat the frying pan, add little oil, after warm saute minced ginger till a little golden brown.

Then add and stir-fry the assorted green peas, corn, and carrot for about 30 seconds.

Add in cooked rice. Add some soy sauce and stir fry for about 5 mins. Lastly add in olive vegetables, salt, nutritional yeast and stir-fry evenly.

You are ready to serve! May top with little olive vegetables on top of the rice as garnish. Red cut chilli in soy sauce as garnish too!

這是一道簡單做的菜。不用特別技巧就可以煮得好吃美味。可以根據自己的喜好或創意加蔬菜。

素食材料 (請用無蛋材料):

*白飯

* 冷凍青豆/玉米/红萝卜(包裝式-請看圖片)因爲是冷凍式的所以請煮水,燙軟然後瀝干水份。 

可按照個人喜好用其它蔬菜代替。

~從朋友那裏學到用切黃瓜代替青豆會很香。但如果用黃瓜就要炒飯的時候最後才加而且不能炒太久要不然過熟就不好吃了!


* 姜片少許(剁碎)

* 橄欖菜(一般都是玻璃罐裝,請選擇標榜[素食可用]的)

這是主材料。這橄欖菜本身是咸的,配白飯很搭。炒飯搭配起來味道也很好。


素食調味:

*醬油 (適量)

* 鹽 (適量)

* 營養酵母粉(大概5桌湯匙)


做法:

中火熱炒鍋,加適量油,油熱后,爆香姜碎。姜碎成金黃色后,加青豆/玉米/红萝卜繙炒大概30秒。接著加飯、醬油繙炒大概5分鐘。接著加鹽、酵母粉翻炒均勻。


完成了!可再加一點橄欖菜在上桌的炒飯上。另外切辣椒和醬油當沾醬。
